Lentil Beans ChickpeasIngredients
4 cups cooked pinto beans*
1-2 tablespoons oil
1 onion, finely diced
1-2 cloves garlic
1-2 teaspoons Cajun or chilli seasoning
salt

Method
1. Heat oil in a heavy based frying pan and add the onion and garlic and cook for 3-4 minutes until onion is just starting to brown. Add cooked beans in spoonfuls at a time, mashing them and frying them as they cook until all the beans have been added.
2. Add the seasoning and enough salt to suit your taste. Add any extra water if a softer mix is desired.
3. Serve beside Mexican food or as a spread on burritos before filling with your favorite topping.
