4 pork slices, each cut into 3
1 small onion, sliced or 2 spring onions sliced
1-2 cloves garlic, sliced
1 small nob fresh ginger, peeled and thinly sliced
225g can pineapple pieces in syrup
2 tablespoon soy sauce
1-2 teaspoons Chinese five spice
1. Heat the large pressure cooker pan over a medium to high heat. Brown pork in a dash of oil. Add onion, garlic and ginger to the cooker and continue cooking for 2-3 minutes until onion begins to soften.
2. Drain pineapple pieces reserving the juice. Place juice in a measuring jug with soy sauce and add water to make up 1 cup liquid and stir in the fi ve spice. Add pineapple pieces and liquid to the pressure cooker. Put lid on and set to low pressure (I), bring up to pressure and maintain the pressure for 20 minutes.
3. Remove from heat and allow pressure to reduce using the natural release method.
4. Serve with rice or noodles and steamed greens.
